Sorry for the delay…

Once I got back to school from Easter Break, everything took off. We had so much to do and a very small window of time. But now I am home and committed to writing once a week. With that said, I bring you another recipe from Easter weekend!

I have never had pineapple upside down cake. Ever. Until my step-mom showed me this. I knew I had to make a recipe from the list for Easter. So I, obviously, chose the Pineapple Upside Down Cake.

It was delicious. Let me just put that out there. Seriously, I could not stop eating it. I also could not resist eating a slice when it came right out of the oven.Whoops.

Easter Weekend

There has to be a reason college breaks are set where they are. And I’m happy about that. Easter break, I guess this is because of when Easter fell but I still think they plan things perfectly, came at the perfect time. Seriously. It was so nice to go home and sleep. I pulled a “typical college kid” this weekend and did almost nothing, and brought home a bunch of laundry. But on Friday night, I babysat my brother. He’s pretty easy to watch, just make sure he has his video games. So I planned on using my father’s kitchen to try out some recipes for here! I made two things, one dessert and one appetizer /side dish. I’ll save the dessert for another time, today I will focus on the amazing Buffalo Chicken Dip.

I had never heard about Buffalo Chicken Dip until I got to college, and I really wanted to try it. But I am very skeptical when other people make things and say “Ya, it should be Gluten Free” or “I’m pretty sure it is. You won’t die though if it isn’t, right?”. One day I was on Pinterest, and I spotted this recipe. Instantly, I put it in my “Recipes” bookmark. Luckily, I had a party to go to on Saturday, so I needed to bring something I was able, and wanted, to eat.

The Long Lost Cupcake Recipe

I love cupcakes. I think they are the perfect dessert and the perfect pick me up. After my long day working at the theatre, I needed to do something fun. Plus I needed to do something to write about.

Wait. Let me back track.

About a year ago I went on the hunt for a new vanilla cupcake recipe. I love vanilla cake. Sorry, Mom. But when I went gluten free, chocolate seemed to make cake taste less like cardboard, so I became a chocolate lover. I mean, as a girl I have always loved chocolate, but not in cake form. Anyway, it was Easter and I tend to bring my own dessert to family gatherings. It’s just easier and safer. So I started to search for the perfect vanilla cupcake. Somehow I found this. I wrote down the ingredients and quickly went to the store. At first I thought it was strange to use orange juice in a cake, but I was willing to try anything.
